We do the air-roasting. — clean, circulating hot air that lifts every bean and surrounds it evenly. This style of roasting brings out a cup that feels lighter in the body, brighter in its acidity, and clearer in its aroma. Smoke is minimized, chaff drifts away, and what’s left is a cup that tastes closer to its origin.
